The harvest is completely de-stemmed and the grape varieties can be vinified separately or together; the temperatures are adjusted and carefully monitored from the moment of vatting. Cold pre-fermentation maceration of about 4 days. Only indigenous yeasts are used for fermentation.
Vatting will then last from 20 to 40 days with a lot of tasting and a little work to promote the finesse and elegance of the wine.
Before and after the malolactic fermentation, the use of temperature control will once again make it possible to do without sulphurising the wine while nourishing it with its lees by regular stirring of the lees.
The maturing of this wine will take place in Bordeaux vats and barrels for about a year. Vinification in accordance with the DEMETER specifications.
Bottled without filtration or sulphiting.
