Slightly curved, amber in colour, between brown and golden, and very firm to the touch, the Sausage of Montbéliard is in keeping with the long tradition of smoked mountain sausages from Franche-Comté.

It is made from pork, cumin, nutmeg, garlic and white wine. It is served in Montbéliard, the town that gave its name, in pies or with lentils. His ideal companion is still a dish of diced potatoes, roasted in a frying pan with a spoon of hot cancoillotte, and escorted by a green salad. It can also be enjoyed as an aperitif.

The external appearance makes it possible to recognize at a glance the true Sausage of Montbéliard. The casing shows darker spots corresponding to lean pork, and light spots corresponding to fat. Its colour is slightly amber (between brown and gold).

To enjoy it, cook it for 20 minutes in simmering water, or in a papillote in the oven. Do not pierce it during cooking, it will lose all its aroma.
